Potbelly Sandwich Works and Starbucks Coffee Company recently opened new locations on one of the highest-traffic corners in Richardson, on the southwest corner of Campbell Road and North Central Expressway. “That corner is a prime intersection in the City; more than 43,000 cars travel east and west on Campbell each day, and almost a quarter million cars a day on Central Expressway,” said Sue Walker, vice president of Economic Development, Richardson Chamber. “We are pleased that these national chains have chosen a site in Richardson as part of their expansions.” Potbelly Sandwich Works opened on August 15 and has about 123 seats (indoors and on the patio). “The primary reasons we selected this site are the proximity to the Telecom Corridor® area and to the University of Texas at Dallas, which is just a couple of miles to the west,” said Bryant Keil, CEO of Potbelly Sandwich Works. “We're very excited about coming to Richardson and to be hiring 35 local residents to work at our store." Starbucks opened July 22 and features a 2,000-square-foot café area, as well as a drive-thru. “We were anxious to fulfill consumer requests to open a new location for commuters and residents in Richardson,” said Beth Cople, district manager for Starbucks. “We are excited about being a part of the Richardson community.” Kent Stainback of The Stainback Organization developed and leased the site, a half-acre parcel of land just on the perimeter of the Radisson Hotel. Potbelly Sandwich Works Potbelly started in 1977 as a small antique store run by a young couple who decided to bolster their business by making sandwiches for their customers. More special sandwiches and homemade desserts were added to the menu and soon the little antique shop became a totally unique sandwich shop, which now has locations in Illinois, Indiana, Michigan, Maryland, Virginia, D.C., Wisconsin, Minnesota, Ohio and Texas. Headquartered in Chicago, the company is privately owned and operates all the Potbelly stores itself, not through franchising.
